How to Make Homemade Lara Bars (Kid and Adult Friendly!)

I don’t know about you and your family, but in my home, we go through SO many granola bars in a short amount of time. They are easy to grab and run with for a day on the go or even just for a quick at home snack. My husband alone eats 2 every day while he is at work. Sure, they can be a healthier option for a quick snack. But a downside? The cost really adds up when you are purchasing multiple boxes every week!

If you want a decent granola bar that does not have a ton of unnecessary added ingredients, it is easy to spend at least $5 on a box of just 4-5 granola bars! So, we decided to start making our own. This way, we get to decide what ingredients we use AND and save a lot of money! These copycat Lara bars are super simple to make and do not require any baking. Below you will find a list of ingredients and the instructions on how to prepare them!

List of Ingredients:

  • Pitted dates (I use Medjool Dates)
  • Cashews, peanuts or almonds
  • Protein Powder of choice (I use this Naked Pea Protein)
  • Cocoa Powder
  • Any desired add ins (ex: Chocolate chips)

Steps:

  1. Place your PITTED medjool dates in a food processor (or blender) along with your choice of nuts. Chop/blend until the nuts are in tiny pieces and the consistency is sticky but moldable.
  2. Add in your protein powder, cocoa powder and blend for about 15-20 more seconds.
  3. Take mix out of the blender and transfer to a bowl. Use a spatula to fold in any other desired ingredients such as chocolate chips.
  4. Place the mix on a piece of parchment paper (aluminum foil works fine as well). Place another piece of parchment paper or foil on top of the mix and use a rolling pin to flatten your bars into your desired thickness (I roll mine out to be about 1/2 inch thick).
  5. Once you have rolled the bars into the desired thickness, cut into rectangles.
  6. Individually wrap bars in foil or store all together in a cool place. They do not have to be refrigerated.
  7. Grab and ENJOY!

Equipment

  • Food processor or blender
  • Mixing Bowl
  • Parchment Paper
  • Rolling Pin
  • Spatula

Ingredients
  

  • 2 cups pitted dates
  • 1.5 cups peanuts or nut of choice
  • 2 tsp cocoa powder
  • 2 scoops pea protein powder or protein powder of choice
  • chocolate chips optional

Instructions
 

  • Place PITTED dates in a food processor (or blender) along with your choice of nuts. Chop/blend until the nuts are in tiny pieces and the consistency is sticky but moldable.
  • Add protein powder & cocoa powder and blend for about 15-20 more seconds.
  • Take mix out of the blender and transfer to a bowl. Fold in any other desired ingredients such as chocolate chips.
  • Place the mix on a piece of parchment paper. Place another piece on top and use a rolling pin to flatten your bars into your desired thickness (I roll mine out to be about 1/2 inch thick).
  • Cut into rectangles.

Notes

You can use medjool or deglet noor dates. Just keep in mind the medjool dates are much larger.
