I always sift the dry ingredients together before lightly whisking to ensure all ingredients have been properly distributed throughout.
- Do NOT over mix. Over mixing will lead to a flatter, denser batter. Lightly FOLD wet and dry ingredients together.
- Let the batter sit for about 5 minutes while the griddle is heating up. You’ll notice when you do this that the batter expands.
- Be patient when flipping the pancakes. Wait until you see multiple bubbles surfacing before flipping. I know it’s temping, but the more you leave them be, the fluffier they become!

Equipment
- Mixing Bowl
- Whisk

Ingredients
- 2 cups whole wheat flour
- 1 tbsp baking powder
- 4 scoops plant based protein powder I use pea protein powder
- 1/2 tsp sea salt
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 2 & 1/4 cups Almond milk
- 1 tbsp pure vanilla
Instructions
- Mix whole wheat flour, baking powder, salt, protein powder, cinnamon and nutmeg in a bowl. Set aside
- Mix almond milk and vanilla in a small bowl
- Combine wet and dry ingredients by folding the ingredients together – do not over mix or your pancakes won't be fluffy!
- Fold in any chocolate chips, fresh fruit, or other desired toppings.
- Scoop medium sized pancakes onto griddle set to 350 degrees fahrenheit. Let cook on one side until you see small bubbles coming through the surface. Flip pancakes and cook until toothpick comes out clean.
- Serve with pure maple syrup, peanut butter, fresh fruit or anything else that sounds good to you!
